2 medium zucchinis, spiralized or thinly sliced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1 bell pepper (any color), diced

1 avocado, diced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

Juice of 1 lemon

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 teaspoon red pepper flakes for some heat

Instructions
 

Prepare the Zucchini: If spiralizing, use a spiralizer to create zucchini noodles. Alternatively, thinly slice the zucchinis into ribbons using a mandoline or sharp knife.

    Combine Vegetables: In a large salad bowl, combine the spiralized zucchinis, cherry tomatoes, cucumber, red onion, bell pepper, and avocado.

      Add Feta and Herbs: Gently fold in the crumbled feta cheese and chopped parsley to the mixed vegetables.

        Dress the Salad: In a small mixing bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper. If you prefer a bit of spice, add in the red pepper flakes to the dressing.
