2 large zucchinis

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup sliced pepperoni (or your choice of toppings)

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Fresh basil leaves for garnish

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare the Zucchini: Wash the zucchinis and cut them in half lengthwise. Using a spoon, scoop out a little bit of the flesh to create a boat shape. This helps hold the toppings.

      Season the Zucchini Boats: Brush the cut sides of the zucchini with olive oil. Sprinkle with salt, pepper, garlic powder, and onion powder.

        Bake the Zucchini: Place the zucchini halves cut-side up on the prepared baking sheet. Roast in the preheated oven for 10-12 minutes, or until slightly tender.

          Add the Sauce and Cheese: Remove the zucchini from the oven. Spread about 1-2 tablespoons of marinara sauce onto each zucchini half. Top with shredded mozzarella cheese, grated Parmesan, and your desired toppings (pepperoni, olives, bell peppers, etc.).

            Season and Bake Again: Sprinkle the dried oregano over the top. Return the zucchini pizzas to the oven and bake for another 10-12 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once out of the oven, let the zucchini pizzas cool for a few minutes. Garnish with fresh basil leaves before slicing and serving.
