2 medium zucchinis, grated

1 cup breadcrumbs (preferably whole wheat or panko for extra crunch)

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour (or almond flour for a gluten-free option)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup chopped fresh parsley (optional)

Olive oil spray (for baking)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Grate the zucchini using a box grater or a food processor. Once grated, place the zucchini in a clean kitchen towel and squeeze out excess moisture. This step is crucial for achieving crispy nuggets.

      Mix the Ingredients: In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, all-purpose flour, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper. If you’re using parsley, add it in at this step.

        Form the Nuggets: Using your hands, mix everything until well combined. Take about 2 tablespoons of the mixture and shape it into small nugget-shaped patties (or use a cookie scoop for uniformity).

          Prepare for Baking: Place the shaped nuggets on the prepared baking sheet. Lightly spray the tops with olive oil to help them crisp up during baking.

            Bake: Bake in the preheated oven for 18-20 minutes, flipping the nuggets halfway through the baking time to ensure an even golden crisp. They should be golden brown and firm to the touch.
