Zucchini Fries with Garlic Aioli

For the Zucchini Fries:

2 medium-sized zucchinis

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

Cooking spray or olive oil for drizzling

For the Garlic Aioli:

½ cup mayonnaise

2 cloves garlic, minced

1 tbsp lemon juice

½ tsp Dijon mustard

Salt to taste

Freshly ground black pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.

    Prepare Zucchini: Wash the zucchinis and cut them into fries, about ¼ inch thick. Make sure they are evenly sized for even cooking.

      Set Up Breading Station: In three separate bowls, place the flour in the first bowl, whisk the eggs in the second bowl, and mix the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in the third bowl.

        Coat the Zucchini: Dredge each zucchini fry first in the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the zucchini in the breadcrumb mixture, pressing gently to ensure it sticks. Place the coated fries on the prepared baking sheet.

          Bake the Fries: Once all the zucchini fries are coated, spray them lightly with cooking spray or drizzle with olive oil. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping them halfway through for even browning.

            Prepare Garlic Aioli: While the zucchini fries are baking, prepare the garlic aioli. In a small bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper. Mix well until smooth and creamy.
