Ingredients

1 pre-made pizza dough (store-bought or homemade)

2 medium zucchini, thinly sliced

1 cup sweet corn kernels (fresh or frozen)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

Prepare the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced zucchini and corn kernels, and season with salt, pepper, oregano, and red pepper flakes (if using). Cook for about 5 minutes until zucchini is tender but still crisp. Remove from heat.

Roll Out the Dough: On a floured surface, roll out the pizza dough into your desired shape and thickness (thin crust is recommended for this recipe). Transfer the rolled dough to a piece of parchment paper for easy handling.

Assemble the Pizza: Sprinkle a light layer of mozzarella cheese over the dough, then evenly distribute the sautéed zucchini and corn mixture over the cheese. Crumble the feta cheese across the top, followed by an equally spaced sprinkling of grated Parmesan cheese.

Bake the Pizza: Carefully transfer the pizza (with the parchment paper) onto the hot pizza stone or baking sheet in the oven. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is bubbly.

Garnish and Serve: Once baked, remove the pizza from the oven and let it cool slightly. Top with fresh basil leaves if desired. Slice and serve hot!
