4 medium zucchinis

2 cups cooked and shredded chicken breast

1 cup romaine lettuce, chopped

½ cup Caesar dressing

½ cup grated Parmesan cheese

½ teaspoon garlic powder

¼ teaspoon black pepper

¼ teaspoon salt

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Optional: croutons for topping

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the zucchinis: Wash the zucchinis and slice them in half lengthwise. Using a spoon, scoop out the seeds and some of the flesh to create a hollow boat.”

      Make the filling: In a large bowl, combine the shredded chicken, chopped romaine lettuce, Caesar dressing, Parmesan cheese, garlic powder, black pepper, and salt. Mix well until all ingredients are evenly coated.

        Stuff the boats: Spoon the chicken mixture into each zucchini boat until they are generously filled.

          Arrange in a baking dish: Place the stuffed zucchini boats in a baking dish. If desired, sprinkle halved cherry tomatoes over the top for added flavor and color.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the zucchinis are tender and slightly golden on top.
