For the Pineapple Salsa:

1 cup fresh pineapple, finely diced

1/2 red onion, finely chopped

1 jalapeño, seeds removed and diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Quesadillas:

4 large flour tortillas

1 1/2 cups shredded mozzarella cheese (or your favorite cheese)

1 cup cooked shredded chicken (optional for added protein)

1 tablespoon olive oil (for cooking)

Sour cream and additional lime wedges for serving

Prepare the Salsa: In a medium bowl, mix together the diced pineapple, chopped red onion, diced jalapeño, and chopped cilantro. Squeeze the lime juice over the top and season with salt and pepper to taste. Stir well and set aside to let the flavors meld.

    Assemble the Quesadillas: Lay out two tortillas on a clean surface. On each tortilla, sprinkle a generous 3/4 cup of shredded cheese. If using, add 1/2 cup of shredded chicken on top of the cheese. Spoon a portion of the pineapple salsa over the chicken. Top with another 3/4 cup of cheese, then place another tortilla on top of each.

      Cook the Quesadillas: Heat a large skillet over medium heat and add a tablespoon of olive oil. Once hot, carefully add one quesadilla to the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip the quesadilla over and cook for another 3-4 minutes until the cheese is melted and the other side is golden brown.

        Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Cover with foil to keep warm. Repeat the process with the remaining quesadilla.

          Serve: Slice the quesadillas into wedges and serve warm with extra pineapple salsa, sour cream, and lime wedges on the side for a refreshing dipping option.
