For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red onion, finely chopped

1 small jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Quesadillas:

4 large flour tortillas

2 cups shredded cheese (cheddar or Monterey Jack)

1 tablespoon olive oil

1 ripe avocado, sliced (for serving)

Sour cream or Greek yogurt (for serving, optional)

Instructions
 

Prepare the Pineapple Salsa:

    - In a medium-sized bowl, combine the diced pineapple, chopped red onion, minced jalapeño, and fresh cilantro.

      - Squeeze the lime juice over the mixture and add salt to taste. Stir gently and set aside to let the flavors meld.

        Make the Quesadillas:

          - Heat a large skillet over medium heat and add a tablespoon of olive oil.

            - Place one tortilla in the skillet and sprinkle half of the shredded cheese evenly over the tortilla.

              - Spoon half of the pineapple salsa over the cheese, then top with another tortilla.

                - Cook for about 3-4 minutes on one side or until golden brown. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

                  - Remove from the skillet and let it cool for a minute before slicing into wedges.

                    - Repeat the process with the remaining tortillas, cheese, and salsa.

                      Serve:

                        - Serve the quesadilla wedges warm with sliced avocado and a dollop of sour cream or Greek yogurt if desired.
