Zesty Pineapple Chicken Quesadillas

Ingredients
  

2 cups cooked chicken, shredded

1 cup fresh pineapple, diced

1 cup shredded Monterey Jack cheese

1/2 cup diced red bell pepper

1/4 cup finely chopped red onion

1 tablespoon fresh cilantro, chopped

1 teaspoon lime juice

1 teaspoon taco seasoning

8 medium flour tortillas

Olive oil for cooking

Salt and pepper to taste

Optional: sour cream and salsa for serving

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded chicken, diced pineapple, shredded Monterey Jack cheese, diced red bell pepper, diced red onion, cilantro, lime juice, taco seasoning, and a pinch of salt and pepper. Stir until everything is evenly mixed.

    Heat the Tortillas: In a large skillet over medium heat, add a drizzle of olive oil. Place one tortilla in the pan and let it heat for about 30 seconds.

      Add the Filling: Once the tortilla is warm, generous spoonfuls of the chicken-pineapple mixture on one half of the tortilla. Be careful not to overfill as it can make folding difficult.

        Fold and Cook: Fold the tortilla in half over the filling. Cook for about 2-3 minutes, or until the bottom is golden and crispy. Carefully flip the quesadilla and cook the other side for another 2-3 minutes until golden brown.

          Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Continue with the remaining tortillas and filling, adding more olive oil to the skillet as necessary.

            Serve: Once all quesadillas are cooked, cut them into wedges. Serve warm with sour cream and salsa on the side for dipping.
