Zesty Italian Veggie Sandwich

1 large ciabatta roll (or your favorite bread)

1 medium zucchini, thinly sliced

1 medium red bell pepper, sliced

1 small red onion, thinly sliced

1 cup fresh spinach leaves

1 medium avocado, mashed

1/4 cup sun-dried tomatoes, chopped

1/4 cup feta cheese, crumbled

2 tablespoons pesto

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning

Optional: Fresh basil leaves for garnish

Prep the Veggies: Start by preparing your vegetables. Slice the zucchini, red bell pepper, and red onion, and set them aside.

    Sauté the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add the zucchini, red bell pepper, and red onion. Sauté for about 5-7 minutes until the veggies are tender but still vibrant. Season with salt, pepper, and Italian seasoning. Remove from heat and let it cool slightly.

      Prepare the Bread: Slice your ciabatta roll in half horizontally. If you like, you can lightly toast the bread in the skillet for added crunch.

        Make the Spread: In a small bowl, mix the mashed avocado with the balsamic vinegar and a pinch of salt. This will give it a zesty flavor.
