Zesty Greek Turkey and Feta Stuffed Peppers

4 large bell peppers (any color)

1 lb ground turkey

1 cup cooked quinoa

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, diced

1 cup baby spinach, chopped

1/2 cup feta cheese, crumbled

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional, for heat)

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

      Cook the Turkey: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and garlic. Sauté for about 3-4 minutes until softened.

        Add Turkey and Seasonings: Increase the heat to medium-high and add the ground turkey. Cook until browned (about 5-7 minutes). Break it up with a spatula and mix in oregano, thyme, red pepper flakes, salt, and pepper.

          Mix in Other Ingredients: To the turkey mixture, add the cooked quinoa, diced tomatoes, baby spinach, and half of the crumbled feta. Stir everything well until spinach is wilted and everything is combined.

            Stuff the Peppers: Spoon the turkey and quinoa mixture generously into each bell pepper, packing it down slightly.

              Top with Feta: Sprinkle the remaining feta cheese over the tops of the stuffed peppers.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the tops are slightly golden.

                  Garnish and Serve: Remove from oven and let cool for a few minutes. Garnish with freshly chopped parsley if desired, and serve warm.
