1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon taco seasoning (store-bought or homemade)

1 cup cooked quinoa (or brown rice)

1 can (black beans, 15 oz) drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 medium avocado, sliced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime (for juice and wedges)

Salt and pepper to taste

Optional toppings: Greek yogurt or sour cream, shredded cheese, sliced jalapeños

Marinate the Chicken: In a bowl, mix the olive oil and taco seasoning. Add the chicken breasts and coat thoroughly. Let it marinate for at least 15-30 minutes (or overnight in the fridge for more flavor).
