Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or a gluten-free alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup water

1 cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil

Salt and pepper, to taste

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup sliced red onion

1/2 cup crumbled feta or blue cheese (optional)

Ranch or blue cheese dressing for drizzling (optional)

Instructions

Preheat Your Oven: Start by preheating your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Batter: In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Gradually add in the water, stirring until you have a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off before placing them onto the prepared baking sheet. Ensure they are evenly coated.

Bake the Cauliflower: Bake in the oven for about 25-30 minutes or until the batter becomes crispy and golden brown, flipping the florets halfway through the baking time for even cooking.

Toss in Buffalo Sauce: Once out of the oven, carefully transfer the baked cauliflower into a large bowl. Drizzle the buffalo sauce over the florets and toss gently until they are well coated.

Assemble the Wraps: Take a tortilla and layer a handful of shredded lettuce, a generous portion of buffalo cauliflower, diced tomatoes, sliced red onion, and crumbled cheese if using.

Drizzle with Dressing: Finish off with a drizzle of ranch or blue cheese dressing for added creaminess.

Roll and Serve: Carefully roll up the tortilla to enclose the fillings, tucking in the sides as you go. Cut in half for easier handling or enjoy whole!
