4 cups seedless watermelon, cubed

2 tablespoons lime juice

1 tablespoon honey (optional)

2 cups kiwi, peeled and sliced

1/4 cup coconut water (optional for a tropical twist)

1 tablespoon agave syrup (optional)

Instructions
 

Prepare the Watermelon Layer:

    - In a blender, combine the cubed watermelon, lime juice, and honey (if using). Blend until smooth. Taste and adjust the sweetness if needed.

      Strain the Mixture:

        - Pour the watermelon puree through a fine mesh strainer into a bowl to remove any pulp for a smoother texture (this step is optional, depending on your texture preference).

          Create the Kiwi Layer:

            - In a separate bowl, combine the sliced kiwi and coconut water (or a splash of water if preferred). Blend until smooth. You can add agave syrup for extra sweetness if desired.

              Layering the Pops:

                - Start by filling your popsicle molds with a layer of the watermelon puree, filling each mold about halfway. Tap the molds gently on the counter to remove any air bubbles.

                  - Place the molds in the freezer for about 1-2 hours, or until the watermelon layer is solid but not completely frozen.

                    Add Kiwi Layer:

                      - Once the watermelon layer is set, carefully pour the kiwi mixture on top, filling the molds to the top. Insert popsicle sticks.

                        Freeze Again:

                          - Return the molds to the freezer and freeze for an additional 4-6 hours or overnight until completely solid.

                            Unmold the Pops:

                              - To release the pops, run warm water over the outside of the molds for a few seconds. Gently wiggle the pops until they come out easily.
