2 cups mixed mushrooms (shiitake, cremini, and button), sliced

2 large leeks, white and light green parts only, thoroughly cleaned and sliced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon unsalted butter

1 cup heavy cream

1 cup grated Gruyère cheese

1/2 cup grated Parmesan cheese

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 teaspoon nutmeg

Salt and black pepper to taste

1/2 cup breadcrumbs (Panko for extra crunch)

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Sauté the vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced leeks and garlic, and sauté until the leeks are tender and translucent, about 5-7 minutes.

      Cook the mushrooms: Add the sliced mushrooms to the skillet. Cook for an additional 5-10 minutes until they are golden brown and have released their moisture. Season with salt, pepper, and thyme. Stir in the nutmeg and mix well.

        Prepare the cream mixture: In a bowl, combine the heavy cream and half of the Gruyère cheese. Stir to combine.

          Combine and assemble: In a greased baking dish, layer the sautéed mushrooms and leeks evenly across the bottom. Pour the cream mixture over the vegetables, making sure it's evenly distributed. Sprinkle the remaining Gruyère and Parmesan cheeses on top. Finally, add the breadcrumbs to create a crunchy topping.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

              Garnish and serve: Remove from the oven and let it cool slightly. Garnish with chopped parsley before serving.
