Warm Cinnamon Roll Baked Oatmeal

2 cups rolled oats

2 cups milk (dairy or non-dairy)

2 large eggs

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 cup brown sugar, packed

1/4 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

1 tablespoon softened butter (for greasing the baking dish)

Instructions
 

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease an 8x8 inch (or similar) baking dish with softened butter.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, brown sugar, and salt. Stir until well mixed.

      Mix Wet Ingredients: In another bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the chopped nuts and raisins or cranberries for added texture and flavor.

          Pour into Baking Dish: Transfer the oatmeal mixture to the greased baking dish, spreading it evenly.

            Create Cinnamon Swirl: In a small bowl, mix together 2 tablespoons of melted butter, 2 tablespoons of brown sugar, and 1 teaspoon of cinnamon. Drizzle this mixture over the top of the oatmeal mixture, then use a knife or toothpick to swirl it into the oatmeal without fully mixing it.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden and the center is set.

                Cool and Serve: Remove from the oven and let cool for about 5-10 minutes before serving. Cut into squares and enjoy warm, perhaps drizzled with additional maple syrup or a dollop of yogurt if desired.
