Ingredients

2 cups rolled oats

2 large apples, peeled, cored, and diced

1/2 cup brown sugar (packed)

1/4 cup maple syrup

1 1/2 teaspoons ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

2 cups milk (dairy or plant-based)

2 large eggs

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

1 tablespoon melted coconut oil or butter (for greasing)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish with melted coconut oil or butter, ensuring it’s evenly coated to prevent sticking.

Prepare the Oat Mixture: In a large mixing bowl, combine the rolled oats, diced apples, brown sugar, maple syrup, ground cinnamon, nutmeg, and salt. Mix well, ensuring the apples are evenly distributed.

Whisk Wet Ingredients: In another bowl, whisk together the milk, eggs, and vanilla extract until fully combined. Take care to beat the eggs well for a fluffy texture.

Combine Mixtures: Pour the wet ingredient mixture over the oat mixture. Stir gently until all the oats and apples are well coated with the liquid.

Optional Add-Ins: If you’re using nuts and dried fruit, fold them into the mixture at this stage for added texture and flavor.

Transfer to Baking Dish: Pour the combined mixture into your prepared baking dish, spreading it out evenly with a spatula.

Bake: Place the dish in the preheated oven and bake for about 35-40 minutes, or until the surface is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove from the oven and let cool for a few minutes before slicing. Serve warm, topped with a drizzle of additional maple syrup or a dollop of yogurt if desired.
