Ingredients

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/4 cup plain Greek yogurt

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

1 tablespoon lemon juice

Salt and black pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Tortilla chips or vegetable sticks (for serving)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Blend the Ingredients: In a food processor, combine the drained white beans, shredded mozzarella cheese, cream cheese, Greek yogurt, minced garlic, dried oregano, smoked paprika, lemon juice, salt, and pepper. Blend until the mixture is smooth and creamy. You may need to scrape down the sides of the bowl a couple of times.

Prepare the Baking Dish: In an oven-safe baking dish, drizzle the olive oil on the bottom to prevent sticking. Transfer the blended bean mixture into the dish and spread it evenly.

Add Cheese on Top: Sprinkle an extra 1/2 cup of mozzarella cheese evenly over the top for a gooey finish.

Bake: Place the baking dish in the oven and bake for 20-25 minutes, or until the dip is heated through and the cheese on top is melted and bubbly.

Garnish and Serve: Once out of the oven, let it cool for a minute. Garnish with freshly chopped parsley before serving. Enjoy your warm cheesy white bean dip with tortilla chips or crunchy vegetable sticks!
