Ingredients

1 cup fresh spinach, chopped

1 cup roasted red peppers, diced (jarred or homemade)

1 cup cream cheese, softened

1 cup sour cream

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon onion powder

½ teaspoon red pepper flakes (optional, for a bit of heat)

Salt and pepper to taste

Fresh parsley or cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Combine the Base: In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy using a spatula or a hand mixer.

Add the Flavors: Stir in the chopped spinach, diced roasted red peppers, minced garlic, onion powder, red pepper flakes (if using), and half of the mozzarella cheese. Mix until all ingredients are evenly incorporated.

Season It Up: Add salt and pepper to taste. Make sure to taste the mixture and adjust seasoning as needed.

Transfer to a Baking Dish: Spoon the dip mixture into a small baking dish (about 8-inch square or similar). Spread it evenly.

Top It Off: Sprinkle the remaining mozzarella cheese and grated Parmesan cheese over the top of the dip.

Bake: Place the baking dish into the preheated oven and bake for 20-25 minutes, or until the dip is bubbling and the cheese on top is melted and slightly golden.

Garnish: Remove the dip from the oven and let it cool slightly. Garnish with freshly chopped parsley or cilantro before serving.

Serve: Enjoy the warm cheesy spinach and roasted pepper dip with a selection of tortilla chips, pita bread, or fresh vegetable sticks.
