Ingredients

4 slices of ciabatta bread or sourdough bread

1 medium-sized apple (Honeycrisp or Granny Smith work great)

6 oz Brie cheese, rind removed and sliced

2 tablespoons honey

1 tablespoon unsalted butter, softened

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

A pinch of salt

Arugula or fresh spinach for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare the Apple: Core the apple and slice it thinly. You can leave the skin on for added texture and color.

Create the Mixture: In a small bowl, mix the honey, cinnamon, nutmeg, and a pinch of salt. Toss the apple slices in this mixture to coat evenly.

        Assemble the Melts:

          - Lay out the slices of ciabatta or sourdough on the prepared baking sheet.

            - Spread a thin layer of softened butter on one side of each slice.

              - Flip the slices for assembly: on the unbuttered side, layer sliced Brie cheese and then top with the spiced apple slices.

Bake the Melts: Place the baking sheet in the preheated oven. Bake for about 10-12 minutes or until the cheese is melted and the bread is toasted.

Serve: Remove the melts from the oven. If desired, add a handful of arugula or spinach to each melt for a fresh touch. Drizzle with additional honey before serving.

Enjoy: Serve warm as a delightful appetizer or a light lunch option.
