1 cup polenta (cornmeal)

4 cups vegetable or chicken broth

1 cup milk (or plant-based milk)

1 cup shredded sharp cheddar cheese

1 cup crumbled Italian sausage (or plant-based sausage)

1 medium onion, diced

3 cloves garlic, minced

1 cup diced bell peppers (mixed colors)

1 cup spinach, roughly chopped

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, for garnish

Prepare the Broth Base: In a medium saucepan, bring the vegetable or chicken broth to a boil. Slowly whisk in the polenta, reducing the heat to low. Stir continuously until the polenta thickens and pulls away from the sides of the pan, about 5-7 minutes.
