4 large ripe tomatoes, assorted colors and sizes, chopped

1 cucumber, diced

1 red onion, thinly sliced

1 bell pepper (any color), diced

1 ½ cups stale crusty bread (like ciabatta or sourdough), cut into bite-sized cubes

1/2 cup fresh basil leaves, torn

1/4 cup extra-virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste
