For the Tofu Skewers:

14 oz firm tofu, pressed and cubed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon maple syrup

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon rice vinegar

1 red bell pepper, cut into chunks

1 zucchini, sliced

8-10 skewers (wooden or metal)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

1/4 cup red onion, finely chopped

1 jalapeño, deseeded and minced

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

Salt and pepper to taste

Marinate the Tofu: In a mixing bowl, whisk together the soy sauce, sesame oil, maple syrup, minced garlic, grated ginger, and rice vinegar. Add the cubed tofu and gently toss to coat. Cover and marinate for at least 30 minutes (or overnight for more flavor).

    Prepare the Skewers: If you’re using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill. Meanwhile, prepare your vegetables: chop the bell pepper into chunks and slice the zucchini into rounds about 1/2 inch thick.

      Make the Strawberry Salsa: In a separate bowl, combine the diced strawberries, red onion, minced jalapeño, chopped cilantro, and lime juice. Season with salt and pepper to taste. Mix well and set aside for flavors to meld.

        Assemble the Skewers: Thread the marinated tofu cubes onto the skewers, alternating with pieces of bell pepper and zucchini to create a colorful arrangement.

          Grill the Skewers: Preheat your grill or grill pan over medium heat. Lightly grease the grill to prevent sticking. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
