Ingredients

8 oz elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 cup whole milk

1 cup heavy cream

4 tablespoons unsalted butter

¼ cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup canned pumpkin puree (the surprise ingredient!)

½ cup breadcrumbs (preferably panko)

2 tablespoons olive oil

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes, stirring continuously until it's bubbly and slightly golden, creating a roux.

Add the Dairy: Gradually whisk in the whole milk and heavy cream, ensuring there are no lumps. Keep whisking until the mixture thickens and becomes creamy (about 5 minutes).

Incorporate Cheeses and Spices: Reduce the heat to low and stir in the cheddar and Gruyère cheese until melted and smooth. Add the garlic powder, onion powder, smoked paprika, salt, and pepper to taste. Finally, add the pumpkin puree and mix well until fully combined. This will give your mac and cheese a creamy texture with a hint of warmth!

Combine Pasta and Sauce: Add the cooked elbow macaroni to the cheese sauce. Stir well to ensure all the pasta is coated with the cheesy goodness. Taste and adjust seasoning if necessary.

Prepare the Topping: In a small bowl, mix the breadcrumbs with olive oil until well combined. This will help create a crunchy topping when baked.

Assemble and Bake: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. Evenly sprinkle the breadcrumb mixture over the top.

Bake: Place the dish in the oven and bake for 20-25 minutes, or until the top is golden brown and crispy.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving. Enjoy your delightful twist on classic mac and cheese!
