For the Meatballs:

1 lb ground beef (or chicken for a lighter option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup green onions, finely chopped

1 clove garlic, minced

1 tsp ginger, freshly grated

1 large egg

1 tsp salt

1/2 tsp black pepper

For the Teriyaki Glaze:

1/2 cup soy sauce

1/4 cup honey (or maple syrup for a vegan option)

2 tbsp rice vinegar

1 tbsp sesame oil

1 tsp cornstarch mixed with 1 tbsp water (for thickening)

1 tsp sesame seeds (for garnish)

1 tbsp chopped fresh cilantro (for garnish)

For Skewering:

10-12 wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Make the Meatballs:

    - In a large bowl, combine ground beef (or chicken), breadcrumbs, Parmesan cheese, green onions, garlic, ginger, egg, salt, and pepper. Mix until well combined, but don’t overwork the meat.

      - Shape the mixture into small meatballs about 1 to 1.5 inches in diameter.

        Cook the Meatballs:

          - Preheat your oven to 400°F (200°C). Place the meatballs on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until cooked through and lightly browned.

            Prepare the Teriyaki Glaze:

              - In a small saucepan over medium heat, combine soy sauce, honey, rice vinegar, sesame oil, and bring to a simmer.

                - Add the cornstarch mixture and stir until the glaze thickens, about 2-3 minutes. Remove from heat and let cool slightly.

                  Skewer the Meatballs:

                    - Once the meatballs are cooked, thread them onto the skewers, about 3-4 meatballs per skewer.

                      Glaze the Meatballs:

                        - Brush the meatball skewers generously with the teriyaki glaze. Reserve some glaze for drizzling before serving.

                          Grill (Optional):

                            - For an added smoky flavor, preheat a grill or grill pan over medium-high heat. Grill the skewers for 2-3 minutes on each side until grill marks appear and the glaze caramelizes slightly.

                              Serve:

                                - Arrange the skewers on a platter. Drizzle with reserved teriyaki glaze and sprinkle sesame seeds and chopped cilantro on top for garnish. Serve warm.
