2 cups rolled oats

1 cup almond milk (or any milk of your choice)

1/4 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup fresh strawberries, hulled and diced

1/4 cup chopped nuts (walnuts or almonds), optional

Fresh mint leaves for garnish, optional

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir to ensure the dry ingredients are evenly distributed.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, honey (or maple syrup), almond butter, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix. Gently fold in the diced strawberries and chopped nuts if using.

          Fill Muffin Tin: Evenly divide the mixture into the muffin tin cups, filling each about 3/4 full. You can add a slice of strawberry on top for extra flair.
