2 boneless, skinless chicken breasts

1 cup fresh pineapple, diced

1 tsp olive oil

2 tbsp soy sauce

1 tbsp honey

1 tsp sriracha sauce (adjust to your spice preference)

1 tsp minced garlic

1/2 tsp ground ginger

1/2 red bell pepper, thinly sliced

1/4 cup green onions, chopped

4 large lettuce leaves (e.g., romaine or butter lettuce)

Salt and pepper to taste

Optional toppings: chopped cilantro, sesame seeds

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, honey, sriracha, minced garlic, ground ginger, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Marinate for at least 30 minutes (or overnight for best results).

    Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Remove the chicken from the marinade, allowing excess sauce to drip off, and place it in the hot skillet. Cook for 6-7 minutes on each side, or until the chicken is cooked through (internal temperature should reach 165°F). Remove from the heat and let it rest for a few minutes before slicing.

      Prepare the Pineapple Salsa: In a mixing bowl, combine diced pineapple, sliced red bell pepper, and half of the chopped green onions. Toss gently to combine and set aside.

        Assemble the Wraps: On a large lettuce leaf, place slices of the cooked chicken. Top with pineapple salsa and sprinkle with remaining green onions. Add optional toppings such as chopped cilantro and sesame seeds if desired.

          Wrap and Serve: Gently fold the sides of the lettuce leaf over the filling and roll it up tightly. Secure with a toothpick if necessary. Repeat with remaining ingredients and serve immediately.
