1 cup fresh raspberries (or frozen, thawed)

1 cup shredded unsweetened coconut

1 cup almond flour

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup chopped pecans or walnuts (optional for crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare the Raspberry Mixture: In a mixing bowl, gently mash the fresh raspberries until they are broken down but still have some texture. Set aside.

      Combine Dry Ingredients: In another bowl, mix together the almond flour, shredded coconut, baking powder, and salt until well combined.

        Mix Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract until smoothly blended.

          Combine Dry and Wet Mixtures: Pour the wet ingredients into the dry mixture. Stir until combined, then fold in the mashed raspberries and chopped nuts (if using). Be careful not to overmix; you want to maintain some raspberry chunks.

            Transfer to Baking Dish: Spread the mixture evenly into the prepared baking dish, smoothing the top with a spatula.
