2 cups fresh or frozen raspberries

2 tablespoons honey or maple syrup (adjust to taste)

2 tablespoons chia seeds

1 cup rolled oats

1/2 cup almond flour (or whole wheat flour)

1/4 cup unsweetened coconut flakes (optional)

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

1/4 cup coconut oil or unsalted butter, melted

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare the Raspberry Filling: In a small saucepan over medium heat, combine the raspberries and honey (or maple syrup). Cook, stirring occasionally, until the raspberries have broken down and become saucy, about 5-7 minutes. Remove from heat and stir in the chia seeds. Set aside to thicken as it cools.

      Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, coconut flakes (if using), salt, and cinnamon (if using).

        Add Wet Ingredients: Pour in the melted coconut oil or butter and vanilla extract into the dry ingredients. Mix until everything is combined and resembles a crumbly dough.

          Layer the Mixture: Press half of the oat mixture firmly into the bottom of the prepared baking dish, creating an even layer. Then, pour the raspberry chia filling over the base and spread it out evenly.

            Top and Crumble: Take the remaining oat mixture and crumble it evenly over the raspberry filling, ensuring it covers the top nicely.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown and set.
