Ingredients

2 medium sweet potatoes, peeled and diced into small cubes

1 tablespoon olive oil

1 small yellow onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

4 cups fresh kale, stems removed and chopped

4 large eggs

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

Optional toppings: avocado slices, hot sauce, or crumbled feta cheese

Instructions

Cook the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Cook for about 10-15 minutes, stirring occasionally, until they are fork-tender and slightly caramelized.

Sauté the Vegetables: Add the chopped onion and red bell pepper to the skillet with the sweet potatoes. Sauté for another 5-7 minutes or until the onion becomes translucent. Stir in the minced garlic, smoked paprika, and cumin, cooking for an additional 1-2 minutes until fragrant.

Add the Kale: Fold in the chopped kale, mixing it thoroughly with the sweet potato mixture. Cook for about 3-5 minutes, until the kale is wilted. Season the hash with salt and pepper to taste.

Fry the Eggs: In a separate non-stick pan, cook the eggs to your preference—sunny-side up or over-easy works well.

Assemble and Serve: Divide the sweet potato and kale hash among plates. Top each serving with a fried egg. Add any optional toppings such as avocado, hot sauce, or crumbled feta for extra flavor.

Enjoy: Serve hot and enjoy your nourishing breakfast hash!
