Sweet Potato Egg Toasts

2 medium sweet potatoes, peeled and sliced into 1/2 inch thick rounds

4 large eggs

1 avocado, mashed

1 tablespoon olive oil

Salt and pepper, to taste

1/2 teaspoon smoked paprika (optional)

Fresh cilantro or parsley, for garnish

Red pepper flakes, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: On a baking sheet, arrange the sweet potato slices in a single layer. Drizzle with olive oil and season with salt, pepper, and smoked paprika (if using). Toss to coat evenly.

      Roast the Sweet Potatoes: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, flipping halfway through, until they are tender and slightly caramelized.

        Cook the Eggs: While the sweet potatoes are roasting, prepare the eggs. You can either poach, fry, or scramble the eggs based on your preference. For poached eggs, bring a pot of water to a simmer, add a dash of vinegar, and gently crack the eggs into the water. Cook for 3-4 minutes or until the whites are set.

          Assemble the Toasts: Once the sweet potato rounds are done, remove them from the oven. On each sweet potato “toast,” spread a generous layer of mashed avocado.

            Top with Eggs: Carefully place the cooked eggs on top of the avocado spread.

              Garnish and Serve: Garnish with fresh cilantro or parsley, and sprinkle with red pepper flakes for an extra kick, if desired. Serve warm.
