1 medium sweet potato

1 ripe avocado

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

2 slices whole grain or gluten-free bread

1 tablespoon lemon juice

Optional toppings: Red pepper flakes, pumpkin seeds, microgreens, or poached egg

Prepare the Sweet Potato: Begin by preheating your oven to 400°F (200°C). Wash and scrub the sweet potato, then slice it into 1/2-inch rounds. Arrange the rounds on a baking sheet lined with parchment paper.

    Season the Sweet Potato: Drizzle the sweet potato slices with olive oil. Sprinkle garlic powder, smoked paprika, salt, and pepper over them. Toss gently to ensure they are evenly coated.
