1 large sweet potato

2 ripe avocados

2 slices of whole-grain bread (or your preferred type)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, for garnish

Optional toppings: crumbled feta cheese, cherry tomatoes, red pepper flakes, or pumpkin seeds

Instructions
 

Prepare the Sweet Potato: Preheat your oven to 400°F (200°C). Peel the sweet potato and cut it into thin rounds or small cubes for quicker roasting. Toss the sweet potato pieces in a bowl with olive oil, garlic powder, smoked paprika, salt, and pepper until well coated.

    Roast the Sweet Potato: Spread the seasoned sweet potato pieces in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until they are tender and slightly crispy, turning once halfway through.
