1 cup raw pistachios, shelled

1 cup Medjool dates, pitted

1/4 cup unsweetened shredded coconut

2 tablespoons rose water (adjust to taste)

1 tablespoon honey or maple syrup (optional for extra sweetness)

1/4 teaspoon vanilla extract

Pinch of sea salt

Additional shredded coconut or crushed pistachios for rolling

Prepare the Ingredients: Start by ensuring all your ingredients are ready. If your dates are dry, soak them in warm water for 10 minutes and then drain.

    Blend the Base: In a food processor, combine the shelled pistachios and shredded coconut. Pulse until you reach a coarse meal consistency.

      Add Dates and Flavors: Add the pitted dates, rose water, honey (or maple syrup), vanilla extract, and a pinch of sea salt to the food processor. Pulse until all ingredients are well blended and start to clump together. You may need to stop and scrape down the sides of the bowl a couple of times.

        Adjust Flavors: Taste the mixture and adjust rose water, honey, or salt if needed. The mixture should be sweet with a distinct rose flavor.

          Form the Bites: Use your hands to take small portions of the mixture (about a tablespoon) and roll them into small balls. If the mixture sticks, slightly dampen your hands with water.
