2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt (or coconut yogurt for a dairy-free option)

1/4 cup honey (or maple syrup for a vegan option)

1/2 cup coconut milk (optional for extra creaminess)

1 teaspoon vanilla extract

A pinch of salt

Optional: Chopped mint leaves for garnish

Instructions
 

In a blender, add the diced mangoes, Greek yogurt, honey, coconut milk, vanilla extract, and a pinch of salt. Blend until smooth and creamy. Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.

    Pour the blended mixture into popsicle molds, leaving a little space at the top for expansion.

      If desired, sprinkle in some chopped mint leaves for an added touch of flavor and visual appeal.

        Insert popsicle sticks (if using) into each mold and freeze for at least 4-6 hours or until fully set.

          To release the popsicles, run warm water over the outside of the molds for a few seconds before gently pulling them out.
