1 lb (450g) salmon fillet, skinless and boneless

1/4 cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon minced garlic

1 teaspoon grated ginger

1 tablespoon olive oil

Salt and pepper, to taste

1 head of butter lettuce or romaine lettuce, leaves separated

1/2 cup shredded carrots

1/2 cup diced cucumber

1/4 cup chopped fresh cilantro

1 jalapeño, thinly sliced (optional for added heat)

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a bowl, combine the sweet chili sauce, soy sauce, rice vinegar, minced garlic, and grated ginger. Mix well.

    Marinate the Salmon: Place the salmon fillet in a shallow dish and pour the marinade over it. Let it marinate for at least 20 minutes, allowing the flavors to infuse.

      Cook the Salmon: Heat the olive oil in a large non-stick skillet over medium-high heat. Once hot, remove the salmon from the marinade (reserve the marinade) and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

        Sauce Reduction: In the same skillet, add the reserved marinade and bring it to a simmer over low heat. Cook for 2-3 minutes until slightly thickened. Remove from heat.

          Assemble Wraps: Once the salmon is cooked, flake it with a fork. Take a lettuce leaf and fill it with a portion of salmon, followed by shredded carrots, diced cucumber, chopped cilantro, and jalapeño slices if desired.
