Ingredients

2 cups rolled oats

1 cup almond flour

1/2 cup brown sugar

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted (or coconut oil for a vegan option)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups peeled and diced apples (about 3 medium apples)

1 tablespoon lemon juice

1/2 teaspoon nutmeg (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.

Prepare the Dry Mixture: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, salt, cinnamon, and nutmeg (if using) until well blended.

Mix the Wet Ingredients: In a separate bowl, whisk together the melted butter (or coconut oil), honey (or maple syrup), and vanilla extract.

Combine Ingredients: Pour the wet mixture into the dry mixture and stir until everything is evenly combined. The mixture will be crumbly.

Prepare the Apples: In another bowl, toss the diced apples with lemon juice to prevent browning. If you like, mix in chopped walnuts or pecans for added crunch.

Layer the Mixture: Press about two-thirds of the oat mixture into the bottom of the prepared baking pan to create a base layer. Spread the diced apples evenly over this layer, then sprinkle the remaining oat mixture on top, pressing down lightly.

Bake: Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and the apples are tender.

Cool and Slice: Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Slice them into squares or rectangles, and enjoy!

Storage: Store the bars in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
