Ingredients

2 cups rolled oats

2 large apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup walnuts or pecans, chopped

1/3 cup maple syrup (or honey for non-vegans)

1 cup almond milk (or any milk of choice)

2 large eggs (or flax eggs for vegan)

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/2 teaspoon baking powder

1/4 teaspoon salt

Additional apple slices and nuts for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x9 inch baking dish or line it with parchment paper.

Prepare the Oats Mixture: In a large mixing bowl, combine the rolled oats, chopped apples, walnuts or pecans, cinnamon, nutmeg, baking powder, and salt. Stir until evenly mixed.

Make the Wet Mixture: In another bowl, whisk together the almond milk, maple syrup, eggs (or flax eggs), and vanilla extract until well combined.

Combine the Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is well incorporated. Let it sit for about 5 minutes to allow the oats to absorb some liquid.

Transfer to the Baking Dish: Pour the oat mixture into the prepared baking dish, spreading it out evenly. If desired, arrange additional apple slices and sprinkle more nuts on top for added texture and flavor.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the mixture is set.

Cool and Serve: Once baked, remove from the oven and let it cool for about 10 minutes before slicing into squares. Serve warm, optionally topped with yogurt, additional maple syrup, or a scoop of ice cream for an indulgent treat.

Enjoy your delightful Sweet Apple Cinnamon Oat Bake as a delicious breakfast or a comforting dessert!
