8 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

1 cup sun-dried tomatoes in oil, drained and chopped

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup heavy cream

1 cup chicken broth

1 tsp Italian seasoning

1/2 cup grated Parmesan cheese

1 cup fresh spinach, roughly chopped

2 tbsp olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package directions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add onions and garlic. Sauté for about 2-3 minutes until the onions become translucent.

        Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and Italian seasoning. Cook for another 2 minutes, allowing the flavors to meld.
