12 ounces spaghetti or your favorite pasta

1 cup sun-dried tomatoes (packed in oil, drained and roughly chopped)

3 cups fresh spinach leaves, washed and roughly chopped

4 cloves garlic, minced

1 small onion, finely chopped

1/2 cup heavy cream

1/2 cup grated Parmesan cheese (plus extra for serving)

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and sauté for an additional 1-2 minutes, being careful not to burn it.

      Add Sun-Dried Tomatoes: Stir in the sun-dried tomatoes and red pepper flakes (if using). Cook for about 3 minutes until they are heated through and fragrant.

        Incorporate Spinach: Add the chopped spinach to the skillet, stirring until wilted, which should take around 2-3 minutes.

          Make the Sauce: Lower the heat and pour in the heavy cream, bringing it gently to a simmer. Allow it to cook for another 2-3 minutes. Stir in the grated Parmesan cheese and let it melt into the sauce.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss everything gently to combine, adding more pasta water if needed to reach desired creaminess.

              Season: Taste and adjust the seasoning with salt and pepper as needed.
