2 ripe avocados

1 cup cherry tomatoes, halved

1/2 cup corn kernels (fresh or canned)

1/4 cup red onion, finely diced

1/2 cup black beans, rinsed and drained

1/4 cup cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Optional: Crumbled feta cheese for topping

Optional: Sliced jalapeños for a kick

Prepare the Avocados: Cut the avocados in half lengthwise and remove the pit. Scoop out a little bit of the flesh if you want more room for the filling. Set the avocado shells aside.
