Summer Quinoa Salad

Ingredients
  

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1 cup corn kernels (fresh or frozen, thawed)

1/2 red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro or parsley, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Optional: 1/2 teaspoon chili powder for a kick

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool in the pot with the lid on for 5 minutes.

    Prepare the Vegetables: While the quinoa is cooking, chop the cherry tomatoes, cucumber, bell pepper, red onion, and avocado. Place them in a large mixing bowl alongside the corn and chopped herbs.

      Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, salt, pepper, and chili powder (if using). Adjust seasoning to taste.

        Combine: Once the quinoa has cooled, fluff it with a fork and add it to the bowl with the vegetables. Pour the dressing over the salad and gently toss everything together until well combined.

          Serve: Serve immediately, or refrigerate for about 30 minutes to allow the flavors to meld. This salad can be enjoyed cold or at room temperature.
