Ingredients

4 medium bell peppers (red, yellow, or orange)

1 cup cream cheese, softened

1/2 cup Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup strawberries, hulled and diced

1 cup blueberries

1 cup diced kiwi

1 cup diced pineapple

1/4 cup shredded coconut (optional)

1/4 cup granola (for added crunch)

Mint leaves for garnish (optional)

Instructions

Prepare the Bell Peppers: Preheat your oven to 350°F (175°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

Make the Creamy Filling: In a mixing bowl, combine the softened cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and creamy.

Add the Fruit: Gently fold in the diced strawberries, blueberries, kiwi, and pineapple into the cream cheese mixture until evenly combined.

Stuff the Peppers: Generously stuff each bell pepper with the fruit and cream cheese mixture, packing it down slightly to hold everything together.

Bake: Cover the baking dish with aluminum foil and bake for 20-25 minutes, until the peppers are slightly tender. Remove the foil and bake for an additional 5-10 minutes to lightly brown the top.

Add the Finishing Touches: Once out of the oven, let them cool for a few minutes. Sprinkle shredded coconut and granola on top for added texture if desired.

Serve: Transfer the stuffed peppers to a serving platter, garnish with fresh mint leaves, and enjoy warm or at room temperature!
