Stuffed Banana Peppers Inspired Rice Bowl

4 large banana peppers

1 cup cooked rice (jasmine or basmati works well)

1/2 lb ground turkey or beef

1/2 cup black beans (canned, rinsed, and drained)

1/2 cup corn (canned or frozen)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Peppers: Preheat your oven to 375°F (190°C). Carefully slice the tops off the banana peppers and remove the seeds and membranes. Set aside.

    Cook the Filling: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion for about 3-4 minutes until translucent, then add the minced garlic, cooking for an additional minute. Add the ground turkey (or beef), cooking until browned. Season with smoked paprika, cumin, chili powder, salt, and pepper.

      Combine Ingredients: Once the meat is fully cooked, stir in the cooked rice, black beans, and corn. Mix until everything is well combined and heated through. Adjust seasoning to taste.

        Stuff the Peppers: Carefully spoon the filling into each banana pepper, packing them tightly but gently. Place the stuffed peppers upright in a baking dish.

          Add Cheese & Bake: Top each stuffed pepper with shredded mozzarella cheese. Pour a little water into the bottom of the baking dish (about 1/4 cup) to help steam the peppers. Cover the dish with aluminum foil and bake for 25 minutes.

            Uncover and Finish Baking: After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown and the peppers are tender.

              Serve: Remove from the oven, let cool for a couple of minutes. Serve the stuffed peppers on a bed of rice, garnished with fresh chopped cilantro and lime wedges on the side.
