Stuffed Avocado Tuna Melts

2 ripe avocados

1 can (6 oz) tuna, drained

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup finely diced celery

1/4 cup finely chopped red onion

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup shredded sharp cheddar cheese

1/4 cup chopped fresh parsley (for garnish)

Optional: sliced tomatoes and fresh arugula for serving

4 slices whole grain or sourdough bread (for toasting)

Instructions
 

Prepare the Tuna Mixture: In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, and lemon juice. Mix well until all ingredients are blended together.

    Add Crunch and Flavor: Stir in the diced celery, chopped red onion, garlic powder, salt, and pepper to the tuna mixture. Taste and adjust the seasoning as desired.
