Ingredients

1 lb (450g) ground chicken

2 tablespoons soy sauce (low sodium preferred)

2 tablespoons honey

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water

1/2 cup green onions, finely chopped

1/2 cup carrots, shredded

1/2 cup bell peppers, diced (any color)

1 tablespoon sesame seeds (optional, for garnish)

1 head of butter or iceberg lettuce (for cups)

Fresh cilantro leaves (for garnish, optional)

Instructions

Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and the cornstarch-water mixture. Set aside.

Cook the Chicken: Heat a large skillet over medium-high heat. Add the ground chicken and cook until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks for even browning.

Add the Sauce: Once the chicken is fully cooked, pour the prepared sauce over it. Stir well to coat the chicken and let it simmer for 2-3 minutes until the sauce thickens slightly.

Incorporate Veggies: Stir in the chopped green onions, shredded carrots, and diced bell peppers. Cook for an additional 2-3 minutes, allowing the veggies to soften a bit but remain crisp.

Assemble Lettuce Cups: Carefully separate the lettuce leaves from the head, keeping them whole. Place a generous spoonful of the sticky honey soy chicken mixture into each lettuce leaf.

Garnish & Serve: Sprinkle with sesame seeds and fresh cilantro leaves if using. Arrange the filled lettuce cups on a platter and serve immediately.
