Sticky Honey Garlic Tofu Stir Fry

1 block (14 oz) extra-firm tofu, pressed and drained

1/4 cup honey (or maple syrup for a vegan option)

1/4 cup soy sauce (low sodium)

3 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons vegetable oil (or sesame oil)

1 bell pepper, sliced (red or yellow for sweetness)

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas

2 green onions, chopped

Sesame seeds, for garnish

Cooked jasmine rice or quinoa, for serving

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Pat dry with paper towels to remove excess moisture.

    Make the Sauce: In a small bowl, whisk together the honey (or maple syrup), soy sauce, minced garlic, and ginger. Set aside.

      Cook the Tofu: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the tofu cubes in a single layer. Let them cook undisturbed for about 4-5 minutes until golden brown on one side. Flip and cook for another 4-5 minutes until crispy on all sides. Remove tofu from the pan and set aside.

        Stir Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

          Combine Tofu and Sauce: Return the crispy tofu to the pan with the vegetables. Pour the honey garlic sauce over the stir-fry. Stir gently to coat everything evenly, cooking for another 2-3 minutes until the sauce thickens a bit.

            Garnish and Serve: Remove from heat and sprinkle with chopped green onions and sesame seeds. Serve the sticky honey garlic tofu stir fry over cooked jasmine rice or quinoa.
