Ingredients

8 chicken sausages (your choice of spicy or mild)

2 cups cherry tomatoes, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, quartered

3 cloves garlic, minced

3 tablespoons olive oil

1/4 cup balsamic vinegar

2 tablespoons honey

2 teaspoons dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh basil leaves for garnish

Optional: Crusty bread for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Sausages: In a large bowl, combine the chicken sausages, cherry tomatoes, red and yellow bell peppers, red onion, and minced garlic.

Make the Glaze: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, oregano, salt, and black pepper until well combined.

Combine: Pour the balsamic mixture over the sausage and vegetable mixture, tossing everything until well coated.

Arrange in Tray: Spread the mixture evenly in a large baking tray, ensuring the sausages are not overcrowded.

Bake: Place the tray in the preheated oven and bake for about 25-30 minutes, or until the sausages are cooked through and the vegetables are tender. Stir once halfway through for even cooking.

Garnish: Once out of the oven, let it cool slightly before garnishing with fresh basil leaves.

Serve: Serve hot, optionally with crusty bread to soak up the delicious balsamic glaze.
