1 tablespoon coconut oil

1 red bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

1 cup snap peas

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon red curry paste

1 can (400ml) coconut milk

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon lime juice

1 tablespoon brown sugar

Fresh cilantro, for garnish

Sliced green onions, for garnish

Crushed peanuts or cashews, for garnish (optional)

Instructions
 

Cook the Noodles: In a large pot of boiling water, cook the rice noodles according to the package instructions. Drain and set aside.

    Prepare the Stir Fry Base: In a large skillet or wok, heat the coconut oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
