Ingredients

1 bag (10 oz) tortilla chips

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) chili (spicy or mild, your choice)

1 small jalapeño, sliced (adjust based on spice preference)

1/2 small red onion, finely diced

1/2 cup black olives, sliced

1 ripe avocado, diced

1 cup pico de gallo or fresh salsa

1/4 cup fresh cilantro, chopped

1/2 cup sour cream

1 lime, cut into wedges

Salt and pepper, to taste

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Layer the Chips: On a large baking sheet or oven-safe platter, spread a single layer of tortilla chips evenly.

Add Chili: Spoon the canned chili over the chips, distributing it evenly.

Cheese It Up: Sprinkle the shredded cheddar and Monterey Jack cheese generously over the chips and chili.

Bake: Place the loaded nachos in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.

Prepare Toppings: While the nachos are baking, prepare your toppings. In a small bowl, mix the diced avocado, chopped cilantro, and diced onion. Season with salt and pepper to taste.

Add Jalapeños and Olives: Take the nachos out of the oven. Immediately sprinkle the sliced jalapeños and black olives on top.

Finish Off: Top the nachos with the avocado mixture, dollops of sour cream, and a generous amount of pico de gallo.

Garnish and Serve: Garnish with additional cilantro if desired, squeeze some lime juice over the top, and serve hot!
